Taco Salad!

Taco “Meat”

  1. 2 C walnuts (pre soaked if you can 8-10 hours, and ok if dried)
  2. 1 TBSP cumin powder
  3. 1 TBSP coriander powder
  4. 1-2 TBSP raw soy sauce (Nama Shoyu is best)
  5. 1/4 C fresh cilantro
  6. 1/2 C fresh cut corn (optional)

In food processor, blend the ingredients until it looks like ground beef (15 seconds or just pulse a few times).  You may need a spoon to stir a little.

American “Cheese”

Note: Arrowroot would make a pourable thick sauce

  1. 2 1/4 C water (add arrowroot to cold water and then boil, stiring it until it turns clear and thick)
  2. 1/3 C arrowroot powder
  3. 2 TBSP fresh lemon juice
  4. 1 C raw cashews (or blanched almonds)
  5. 4 oz jar pimientos (1/2 C) with liquid
  6. 3 TBSP foood nutritional yeast flakes
  7. 2 tsp onion powder
  8. 2 tsp sea salt
  9. 1 tsp paprika
  10. 1/4 tsp garlic powder

Process thickened sauce with cashews in a blender until very smooth.  Add remaining ingredients and continue blending until very smooth.  Pour into a container and refrigerate or use immediately.

To make solid cheese: substitute Agar for arrowroot and this will make a solid cheese. This recipe can be frozen and grated.

Guacamole

  1. 2 avocado, very ripe
  2. 2 clove garlic
  3. 2 TBSP lemon juice
  4. 1/4 tsp sea salt
  5. 1/4 C fresh cilantro

Ranch Dressing

  1. 1 C Vegenaise
  2. 1 tsp garlic powder
  3. 1 TBSP minced onion
  4. all purpose seasoning
  5. 2 tsp lemon juice
  6. 1/2 tsp sea salt
  7. 3 TBSP distilled water

Place ingredients in a mason jar and shake; for dip omit water.  For taco salad, omit the all purpose seasoning and replace with taco seasoning.

Start with shredded lettuce of your choice, then pile on as you like.  Buffet is great with choice of diced tomatoes, salsa, peppers, onions, blue corn chips, olives, beans, whatever you want. Vegan of corse!
