Raw Pumpkin Pie

A sweet, tasty Holiday dessert with absolutely no baking involved!

Ingredients

  • 1 1/2-2 Cups Raw pumpkin
  • 1 Cup Almonds
  • 1/2 Cup coconut
  • 2-4 Tablespoons fresh lemon or orange juice
  • 2 Tablespoons Raw, unfiltered honey
  • 1/2 Cup Organic raisins, soaked
  • 1/2 teaspoon Ginger
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 2-3 Medjool Dates (Pitted, Soaked 2 Hours and Drained)

Directions

In a blender, food processor, or Vita-Mix, combine the pumpkin, almonds, juice and soaked dates, and process until creamy. If too thin, add more almonds and process until creamy (the consistency should be that of a pancake batter). Pour into mixing bowl and fold in coconut, raisins, and spices. Pour into prepared piecrust, cover, and chill overnight. The pie will firm up some when chilled
