Spanish Rice

From: How We All Went Raw


  • 1 head of cauliflower, grated or finely chopped in food processor
  • 2 green onions, diced
  • 2 tomatoes, diced
  • 1 bell pepper, diced, red or yellow or orange
  • 1 jalapeno pepper, diced (optional)
  • 2 TBSP fresh lemon juice
  • 1/4 C cilantro, diced
  • 1 avocado, diced or mashed in (I didn’t have any and used 1/2 C cashews soaked 30 min then ground up and 2 TBSP nutritional yeast)
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp sea salt
