Like Chicken Salad – but Barley instead

This makes a lot!  Serves 8-10

Mix:

  • 1 cup pearled barley cooked in 3 cups for 1 1/4 hr (I did this the night before and stored in frig
  • 3 kiwifruit, peeled and diced
  • 1-2 apples diced
  • 1-2 cup halved grapes
  • 1/2 cup sliced celery
  • 1/3 cup dried cranberries or golden raisins

Mix

  • 3/4 cup vegan mayonnaise
  • 2 tsp curry powder
  • 1 1/2 tsp cinnamon
  • 3 tsp agave nectar
  • 1 tsp molasses
  • 4 tsp lime juice
  • 1/4 tsp sea salt

Combine the two mixtures.  Serve in whole-wheat pita breads, or on bread, or on a bed of lettuce.
