Vegan French Toast – Yum! It’s been so long…

  • 2 ripe bananas
  • 1/2 cup un sweetened almond milk
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (optional) or dash of nutmeg
  • 1 teaspoon vanilla
  • bread, any kind is fine – even cinnamon raisin whole wheat
  • vegan margarine or coconut oil

Have skillet on medium with margarine or oil, then use blender for bananas, milk, and spices.  Dip bread in mixture – I had enough for 6 pieces.  Cook until golden brown.  Serve with toppings: I like strawberries, pecans, and 100% pure maple syrup.  Enjoy!
